Courgette Curry
Ingredients
80ml sunflower or similar
2 medium onions, thinly sliced
5-6 garlic cloves, crushed/grated
1 1/2 inches piece of ginger, grated
1 tsp cumin seeds
1 tin tomato pieces
1 salt to taste
1/2 tsp coriander powder
Freshly ground black pepper to taste
1/2 tsp hot chili powder, or to taste
1 tablespoon curry powder
600 grams approx. of courgette, cut in quarters
lengthwise and sliced
1 jalapeno chili pepper sliced
12 pickling onions
A bunch of chopped coriander, for garnish
Method
Heat the oil in a non-stick pan over med/high
heat. Add the sliced/chopped onions, and sauté until they are lightly golden.
(I used my cast iron saucepan so it could also go into the oven).
Lower the heat to medium and add the garlic, ginger, curry
powder and cumin seeds. Sauté for about a minute Add the tomato, salt, coriander
powder, black pepper, and hot chili powder. Sauté for a minute, then stir in
the zucchini and 1/4 cup of water. Mix well, ensuring that the zucchini is well
coated.
Cover and let cook on medium heat for 7-10 minutes, stirring
once in between. Once most of the water has dried up, use a spoon or fork to
break the zucchini into pieces. Add the sliced green chili pepper and sauté for
a few minutes.
Lower the heat to the lowest setting, cover and continue to
cook for 15-20 minutes, stirring halfway. If you think it will stick to the
pan, add a splash of water. Uncover and stir well. If needed, raise the heat to
high to sauté any extra moisture for 3-5 minutes. Taste and adjust salt. (Instead of this I put into the oven, covered
at 140°C for an hour.
Meanwhile, toss the pickling onions in a little oil and
butter and allow them to cook slowly on a low heat until just soft but holding
their shape
When the water has completely dried up in the main dish and
the zucchini is very well cooked, turn off the heat, add the pickling onions
and garnish with coriander to taste. (I
took it out of the oven, put it back on the hot plate with lid off, and cooked
a bit longer to remove the liquid).
It can be eaten with a naan or you can serve it
with any type of bread, rice or even pasta.
