Courgette Pickle

My Courgette Pickle. So easy and delicious *****


½ litre (500ml) white wine vinegar

700 grams (3 ½) cups white sugar 

1 packet of pickling spice mix (I used South African 26 grams). [I put the spice into a muslin bag as I did not want all the seed in the end product but this is a matter of choice)

Put into a stainless steel pan and bring to a boil.

Then add......

8 cups of chopped courgette (about 1 cm square) I removed seeds but not the skin. (One cup is about 150 grams). If you have a mix of yellow and green courgettes it looks good but it makes little difference to the taste!

2 cups of thinly sliced onions or chopped (About 280 grams).

1 cup sliced or chopped peppers. Red is good for colour!

I chopped chili (optional)

Simmer for 10 to 12 minutes.  The hot jars are tightly packed with the cooked vegetables (I push down quite firmly) and then filled to overflowing with the boiling vinegar liquid. The lids are screwed tight, and the sticky overflow liquid is washed off with hot water. The lid may need re-tightened as the jar cools down. Label and date.

This makes about 4 jam jars packed tight.  

Best to leave for a month or longer.  I opened a jar the other day that was at the back and it had been missed 2014 - it was 8 years old and yummy.
